This baking soda substitute is designed specifically for individuals on Kidney Dialysis who must avoid sodium bicarbonate, potassium bicarbonate, and who require higher intakes of calcium. Ener-G Baking Soda is free of sodium, potassium, aluminum and is high in calcium. Baking soda and baking powder are leavening agents in baked goods. They create the necessary gas for breads, cakes, muffins etc. to rise.
Twice as much Ener-G Baking Soda must be used in place of regular baking soda.

This product does fair but not super--definitely follow measuring recommendation AND mix and use immediately

I was dubious about this product, but traditional baking soda has just too much sodium. So far, though, the Ener-G baking soda has worked very well. I've used it in an Irish soda bread and two cakes (a chocolate and a yellow). The results have been very good, and I don't notice a significant flavor difference between baked goods made with this and those made with traditional baking soda.
Be aware that you need to DOUBLE the amount of Ener-G baking soda that you use ... which brings me to the only real downside of this product: it's very expensive compared to normal baking soda. Otherwise, though, it's great.
